Winery
The winery has been renovated from a working garage. It has been heavily
insulated and is temperature controlled. We upgraded our production
to 900 cases this year. Check the Our Wines tab to see which
wines are now available for sale.
The tasting room is a rustic room attached to the side of the garage.
There is no charge to taste our wines except if you wan to keep
the BashaKill glass which is $2. We sell by the glass or you can
buy a bottle and share it amongst your friends. Feel free to bring
your own cheese and crackers or a lunch where you can eat on the
outside seating area. In the winter months we close off the back
padio which is heated with our two wood stoves. We have live music
all year long on Saturdays, all events and musicians will be listed
under our Directions tab.
New To The Winery
Coming in 2011
This summer we will break ground in the mountain and build
the BashaKill Wine Cave! When our cave is complete we will age all of our reds in the cave. The cave will give us the perfect environment to age our low sulfited wines longer and also make some reserve wines. It will bring our red wines to a new level.
We also plan to make our Estate White Tail into a sparkling wine. We have had problems in the past with refermentation in our bottles due to NO chemical additves so we decided to embrace the yeast and use it to our advantage! The cayuga works very well with carbonation especially when harvested a little early. We then add organic sugar to get the correct alcohol levels and we only add organic yeast nutrients during fermentation and keep our sulfites under 35 parts per million. Nothing else goes in our wine!
